A note from the maker :
“A classic liqueur this spirit has been made for at least 600 years in monasteries and villages in Italy. There are also versions of this liqueur produced in France and other European countries. We first became interested in Nocino following a programme from the renowned Italian, then later British, chef the late Antonio Carluccio. Carluccio wrote and spoke passionately about this liqueur sharing traditional methods of production and the mythology associated with this amazing product.
The dark mahogany colour and flavours come from the extraction, by the alcohol, of compounds from the husk of green walnuts. These are walnuts that are picked prior to the shell hardening which would normally encase the developing meat that would be consumed as a walnut. Initially this product is a dark green ‘swamp waterish’ looking muck – not at all appetising and incredibly bitter, but, as the molasses spirit walnut husk mix ages and matures an amazing array of stunningly, beautiful flavours are found within the spirit.
We have honoured the old techniques, but have also applied modern liqueur making extraction techniques in the manufacture of our Nocino. It tastes just like Nana’s Christmas Cake, but at 26% abv it is not as alcoholic! Nocino is an amazing spicy liqueur normally consumed at the end of a meal. Rarely is it consumed with a mixer such as soda or tonic but it marries perfectly with things like cream, coffee or chocolate. In its most basic form it is poured over ice with, perhaps, a dollop of cream. Try an espresso nocino gintini, ice, espresso coffee, gin, nocino shaken and strained. In cooking it can be used, sparingly, wherever vanilla is used. You’ll be amazed by the versatility of this product.
